We fired up the evaporator at the Camp Heidelberg Outdoor Education Centre today to start the maple syrup season.  It was also our first day of classes, and it isn’t often that we have enough sap to boil this early in the season.  The trees were tapped last week, we did collections of about 300-400 liters of sap on Thursday and again on Friday, and another 900 litres on Saturday.  It takes about 8 hours of boiling to get the first batch of finished syrup, which we hope to complete tomorrow.  Followed by a pancake breakfast, or some ice cream floating in syrup, or…
