I am typing this from inside the sugar shack where I am boiling off the sap that was collected yesterday, approx 700L, and the first batch of syrup for the day is really close to being ready. I should only be a few more minutes before I am filtering and bottling. It is an interesting day, having a mix of rain and snow, and more sap on the trees. Our storage tank is getting low so I should be heading out to collect as soon as I finish the bottling. I can actually see the ground around the base of the trees, now. We began with ~40cm of snow in the bush and there is now about 10cm remaining… sweet!
